OATMEAL & APPLESAUCE COOKIES -
SUGARLESS
 
1/2 c. flour
1 1/2 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
1/4 tsp. nutmeg
1/4 tsp. cloves
1/2 tsp. allspice
1/2 c. quick oatmeal
1 c. raisins
1/2 c. unsweetened applesauce
1/4 c. cooking oil
1 med. egg
1 tsp. vanilla

Soak raisins in hot water or rum 30 minutes before baking.

Mix flour, cinnamon, soda, salt, nutmeg, cloves, allspice, oatmeal and raisins. Add applesauce, oil, egg, vanilla and mix just to moisten. Drop on greased sheets.

Bake at 375°F for about 12 minutes. If you are not on a strict diet, add 1/4 cup honey for better flavor.

Best served slightly warm.

Sorry, these are not sugar-free, even if you do not add the optional honey/agave nectar. They have raisins and unsweetened applesauce, which contain sugar naturally. Diabetics would have to limit themselves to one cookie per serving.

Although it contains sugar, it does not contain SUCROSE or table sugar. Grapes contain mostly glucose and fructose. I believe apples are mostly fructose. The glycemic index of the sugar has a lot to do with how much a diabetic can consume. Since the cookie is mostly starch, the body will convert it into sugar so in fact the whole cookie is sugar to the body. It's a matter of how much hits the bloodstream at a time. Agave nectar is an excellent choice with a GI of 15.

I haven't tried the recipe yet. I am concerned about the lack of sweetness. May I add a bit of Splenda? Also, I am shipping them to a diabetic brother. Cannot serve warm. How will they travel? Thanks

Lost my other recipe, glad I did - this one is great! Except - a recipe that makes 2 dozen cookies?! lol

Increased the oatmeal a bit, added about 1/4 cup Truvia and threw in a handful of dark chocolate chips. I know - no longer sugar free - but wonderful!

Is there anything I can do to add some sweetness to these cookies? I'm making them for a friend who is diabetic and the cookie dough has only flavor of the spices. Can't taste the applesauce (sugar free) and the dough seems "blah". Can I top them with drizzled chocolate?

Add Splenda? It is safe for diabetics the package says - I love Splenda, it's great to cook or bake with.

We really enjoy these cookies--slightly altered. I also leave out the oil and use just 1-2 teaspoons of organic agave nectar instead of honey. I also add a small handful each of chopped walnuts & dark chocolate chips. These are really guilt-free and so yummy warm and fresh from the oven! A few craisins replacing some of the raisins is good, too.

These are yummy cake-like cookies. I added some walnuts and substituted agave nectar for honey since I was all out. I substituted a couple of tablespoons of ground flax seed for the same amount of flour. Next time I may skip the oil all together.
