CHEESE DIP 
2 eggs, well beaten
1/2 c. sugar (white)
1/3 c. vinegar
1/4 tsp. dry mustard (or 1 tsp. yellow prepared mustard)
1 lb. sharp cheese, grated
1 sm. onion, grated
1 sm. jar pimento, diced
1/4 c. green pepper, diced (optional)
Add 1 tbsp. mayonnaise to cooled mixture

Cook first 4 ingredients until thick. Cool. Add next ingredients to cooled mixture. Spread on crackers or other foods.
