PINEAPPLE CHEESECAKE 
2 (8 oz.) cream cheese
1/2 tsp. vanilla
1/2 c. sugar
3 pkgs. ladyfingers
1 pkg. instant vanilla pudding
2 lg. cans crushed pineapple
2 pts. heavy cream
A spring form pan

Strain pineapple well, line pan with ladyfingers on sides and bottom. Beat cream cheese, sugar and vanilla. Add box of instant pudding. Add 1 pint of heavy cream (beat almost to a whip). Add second pint of heavy cream. Pour half of mix into pan. Layer half of pineapple, layer of ladyfingers, and pour other half of mix. Layer other half of pineapple. Chill and serve. Can decorate with strawberries, cherries...
