MICROWAVE HASHBROWN OMELET 
5 c. hashbrown potatoes
3 c. diced ham
1 c. Velveeta cheese
4 eggs
Any other omelet ingredients desired

Put potatoes into a microwave dish and microwave covered on high 4 to 6 minutes until potatoes are tender. Beat eggs. Pour on to potatoes and add the rest of ingredients. Microwave uncovered high 6 to 7 minutes stirring once after 4 minutes. Season with salt and pepper after cooking. Serve hot. 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
