OMELET POTATOES 
2 or 3 tbsp. bacon drippings
2 c. finely chopped, cold boiled potatoes
1 tbsp. chopped parsley
1/2 tsp. salt
1/8 tsp. pepper
1 med. onion, sliced thin

Simmer onion in fat until brown. Add other ingredients, mix thoroughly. Allow to brown on one side, fold over like an omelet.
