PUMPKIN MUFFINS 
5 c. flour
4 c. sugar
2 tbsp. cinnamon
2 tsp. baking soda
1 tsp. salt
2 to 4 c. apples, finely chopped (optional)
1 lg. can Libby's solid pack pumpkin
4 eggs
1 c. vegetable oil

In large mixing bowl, combine flour, sugar, cinnamon, baking soda, and salt; set aside. In another bowl, combine pumpkin, eggs, and oil. Add to dry ingredients; stir just until moistened. It will be very thick. Add optional apples at this time. Pour into paper-lined muffin cups, filling to 3/4 full. Bake at 350 degrees for 35 to 40 minutes. Yields approximately four dozen very moist muffins. Great for breakfast or for snacking.
