PUMPKIN APPLE STREUSEL MUFFINS 
2 1/2 c. flour
2 c. sugar
1 tbsp. pumpkin pie spice
1 tsp. baking soda
2 eggs, lightly beaten
1 c. Libby's pumpkin
1/2 c. vegetable oil
2 c. peeled, finely chopped apples

Preheat oven to 350 degrees. In large bowl combine first 5 ingredients. Set aside. In medium bowl combine eggs, oil, and pumpkin. Add liquid ingredients to dry ingredients. Pour into greased muffin tins and sprinkle the top with streusel. Bake for 35 minutes. Makes 2 dozen.

STREUSEL:

2 tbsp. flour
1/4 c. sugar
1/2 tsp. cinnamon

Cut in 4 teaspoons butter until mixture is crumbly.
