ZUCCHINI BREAD | |
3 eggs 2 c. white sugar 1 c. cooking oil 2 c. grated raw zucchini 3 tsp. vanilla 3 c. flour 1 tsp. salt 1 1/2 tsp. cinnamon 1 tsp. baking soda 1 1/2 tsp. baking powder 1 1/2 c. nuts Beat together eggs, sugar and oil until creamy. Add zucchini and vanilla. Add remaining ingredients. Makes 2 large or 6 small loaves. Bake large loaves 1 hour and 15 minutes; small loaves for 45 minutes at 350 degrees. |
