QUICK, DELICIOUS APPLE-CRANBERRY
SALAD
 
Salad:

1 large [softball size] Honey Crisp Apple
1 package [approximately 2 cups] fresh cranberries
1/2 cup walnuts, coarsely
1-4 Tablespoons of sugar, depending on your taste

Dressing:

2 tablespoon canola oil
1 tablespoon orange juice
1/4 teaspoon freshly ground pepper
1/2 teaspoon salt, or to taste

Wash and dry the Honey Crisp Apple, wash the cranberries. Mix Dressing ingredients in a small bowl and set it aside to let the flavors meld.

To make the salad:

Coarsely chop 1/2 cup walnuts, place in a bowl large enough to mix all the Apple-Cranberry Salad ingredients together. Cut apple into small dice, add to walnuts. Finely chop fresh cranberries, add to walnuts and apples. Stir and taste.

If you use sugar, add 1 tablespoon at a time, stirring and tasting after each addition. Too much sugar detracts from the lovely taste of the apple. Stir in dressing.

Apple-Cranberry Salad may be served immediately, or refrigerated until serving time.
