CARAMEL ICE CREAM DELIGHT 
1 1/2 c. flour
1 c. oatmeal
1/2 c. brown sugar
1 1/2 c. chopped pecans
1 c. melted butter
6 oz. caramel topping
1/2 gallon vanilla ice cream

Combine first 4 ingredients. Stir in butter. Spread mix in thin layer on cookie sheet and bake at 350 degrees for 20 minutes or until browned. Cool and crumble. Spread 1/2 of crumbs in a 13 x 9 inch dish.

Spoon caramel over the crumbs. Slice softened ice cream over topping and top with remaining crumbs. Cover and freeze until firm. Serves 12 to 15. Delicious and great for entertaining during the summer.
