BANANA MINICHIP MUFFINS 
1 egg
2 ripe bananas, mashed
1/2 c. oil
1/3 c. milk
1 tsp. vanilla
2 c. flour
1/2 c. sugar
1 tbsp. baking powder
1 tsp. salt
1/2 c. mini chocolate chips

Beat egg in bowl. Add bananas, oil, milk and vanilla. Stir together flour, sugar, baking powder and salt. Stir in chips. Stir liquid into dry ingredients. Pour batter into cupcake liners 3/4 full. Sprinkle with additional chips if desired. Bake at 400 degrees for 12 to 14 minutes or until golden brown. Remove from pan. They freeze well.
