DOUBLE TREAT PEACH PIE 
1 c. sugar
3 tbsp. cornstarch or quick cooking tapioca
1/2 c. water
1 tbsp. butter
6 lg. peaches
1 baked 9" pie shell
Whipped cream (opt.)

Mix together sugar and cornstarch; add water and butter and bring to a boil. Dice 3 of the peaches and add to syrup; simmer 5 minutes or until thick. Cool. Slice remaining peaches into pie shell and pour the cooled peach and syrup mixture over. Top with whipped cream if desired.
