LOAF FRUIT CAKE | |
1 c. flour, sifted 1 c. sugar 1 1/2 lbs. (3 c.) pitted dates, cut 1 lb. walnuts, left in big chunks 4 well beaten eggs 1/2 tsp. baking powder 1/2 tsp. salt 1 (8 oz.) bottle maraschino cherries, drained whole 1 tsp. vanilla Sift dry ingredients in a large bowl. Add fruits and nuts without chopping or slicing into flour mixture. Stir until well coated. Blend vanilla into well beaten eggs and pour over mixture in bowl. Use hands to mix thoroughly. Line greased loaf pan with heavy brown paper - grease well. Spoon in batter. Bake in moderately slow oven at 325 degrees, 1 1/4 to 2 hours. (5 1/2 x 9 1/2 x 2 3/4 inch pan.) |
