5 med. zucchinis
3 eggs
1 tbsp. grated Parmesan cheese
1 or 2 garlic cloves, minced
2 tbsp. flour
1/2 c. finely chopped parsley
1 tsp. salt
1/8 tsp. pepper
1/2 c. olive oil

Grate zucchini and press out water. Heat oil in skillet. Mix rest of ingredients in bowl and add zucchini. Spoon out heaping tablespoons into hot oil and saute about 2 minutes or until brown. Turn to brown the other side. Drain well on brown paper bag.
