3 c. zucchini, shredded
2 to 3 eggs, beaten
1 tsp. baking powder
Salt & pepper to taste
1/2 c. flour
1/4 c. chopped onions
1/2 c. shredded cheese (opt.)
1 tbsp. bacon bits (opt.)

Mix together. Drop by tablespoonful onto lightly oiled pan. Brown on both sides. Sprinkle with grated Parmesan cheese if you want.
