PATTY CAKE 
3/4 c. sugar
1 egg
1/2 c. flour
1 tsp. baking powder
1/4 c. nut meats
1 tsp. salt
1 c. Patty Pan squash, grated
1 tsp. vanilla
Ice cream of whipped toppings

Beat egg and sugar. Mix well. Add the dry ingredients plus squash, nuts, vanilla. Pour into greased pie pan or 8 inch cake pan. Bake at 300 degrees about 45 minutes. Serve warm with ice cream or whipped cream topping. This cake contains no shortening. Freezes well and is even better the second day after baking.

This recipe would be delicious if you cut the salt to 1/4 to 1/2 teaspoon. I served it to my family last night and all agreed it was much too salty.

I used this recipe but found it too sweet. Instead, I used 1/2 cup sugar, and as the previous review, used only 1/2 tsp. salt. I also added 1/2 tsp cinnamon and used whole wheat flour. With these adjustments, I found them very moist and delicious.
