ZITI WITH SPINACH AND CHEESE
SAUCE
 
1 (10 oz.) pkg. frozen chopped spinach
1/2 lb. ziti or other short tubular pasta
4 tbsp. butter, divided
1 tsp. salt
1 c. Ricotta cheese
1/2 c. Parmesan cheese
Freshly ground pepper to taste

1. Thaw spinach according to package directions; drain. Squeeze as much liquid from spinach as possible.

2. Cook pasta according to package directions.

3. While pasta is cooking, melt half the butter in a large skillet. Add spinach and saute over medium heat for 3 minutes, turning frequently. Sprinkle with salt.

4. Drain cooked pasta and add to spinach along with remaining butter and other ingredients. Toss gently over low heat until combined and serve. Serves 4.
