ZITI WITH SPINACH AND CHEESE
SAUCE
 
1 (10 oz.) pkg. frozen chopped spinach
1/2 lb. ziti or other short tubular pasta
4 tbsp. butter, divided
1 tsp. salt
1 c. Ricotta cheese
1/2 c. Parmesan cheese
Ground pepper to taste

Thaw spinach and squeeze as much liquid from spinach as possible. Cook pasta according to directions. While pasta is cooking, melt half of butter in large skillet. Add spinach and saute over medium heat for 3 minutes, turning frequently.

Sprinkle with salt. Drain cooked pasta and add to spinach along with remaining ingredients and butter. Toss gently over low heat until combined.
