BAHAMIAN BAKED MACARONI AND
CHEESE
 
1 box elbow macaroni
2 eggs
2 tbsp. butter
1 small onion, chopped
1/2 green bell pepper, chopped
red pepper, to taste
1 block regular/sharp Cheddar cheese, grated
1/2 cup evaporated milk
table salt or seasoning salt, to taste

Boil elbow macaroni as directed on the box. Drain and return to the pot it was boiled in. Add grated cheese and remaining ingredients. Stir until cheese is melted, all ingredients are well-blended and texture is creamy.

Pour into baking pan. Top with thin layer of grated cheese and bake at 350°F for about 45 minutes or until the top is golden brown. Some ingredients may be substituted for a healthier version.

My ex mother in law gave me this recipe, she is from the Bahamas and it is exactly to the tee, I thought it was her own. Either way, it's delicious.
