SPINACH IN CITRUS SAUCE 
2 pkgs. (10 oz. each) frozen chopped spinach
1 egg yolk
1 1/2 tsp. lemon juice
1/4 c. butter, melted
2 tbsp. orange juice
1/2 tsp. BLAIR lemon flavoring
1/2 tsp. BLAIR orange flavoring

Cook spinach as directed on package. Meanwhile, place egg yolk, lemon juice and flavorings in a blender; blend on low speed. While blender is running, add a thin stream of hot butter. Add all the butter and turn off blender. Stir in orange juice, drain cooked spinach and fold sauce through it. Yield: 6 servings.
