BEV'S MUSHROOM CASSEROLE 
1 1/2 lbs. ground beef
1 lg. onion (diced)
1 green pepper, diced (optional)
1 lb. fresh mushrooms (sliced)
1 (22 oz.) can whole tomatoes
12 oz. Cheddar cheese, grated
1 (8 oz.) bag fine egg noodles, uncooked

Place ground beef, diced onion and diced pepper in frying pan. Saute until ground beef is browned and onion and pepper are soft. Remove beef, onion and pepper; saute mushrooms in remaining fat

Place beef, onion, pepper and mushrooms in large bowl. Add 22 ounce can tomatoes (including juice), crushing tomatoes. Add 2/3 of cheese, mix. Add noodles; toss.

Place in 9x13 casserole dish. Sprinkle remaining cheese on top. Seal tightly with aluminum foil. Bake at 350 degrees for 1 hour. Freezes well after baking.
