CARROT AND APPLE BAKE 
2 c. thin carrot coins
1/8 c. minced onions
2 tbsp. brown sugar
2 tbsp. butter
2 med. apples, diced
Salt to taste
1/4 c. water
4 thin lemon slices

In a covered casserole, combine carrots, apples, onion, salt, and brown sugar; mix well. Add water; dot the mixture with butter and top with lemon slices. Cover and bake for 20-30 minutes.
