CARROT APPLE MUFFIN 
2 c. shredded unpeeled apples
1 1/3 c. sugar
2 c. shredded carrots
1 c. walnuts, chopped
2 1/2 c. flour
1 tbsp. baking powder
2 tsp. baking soda
1/2 tsp. salt
1 tbsp. cinnamon
2 large eggs
1/2 c. vegetable oil

Mix apples, carrots and sugar together. Set aside. In large bowl mix dry ingredients, stir well. Combine with apple mixture, mix in walnuts. Add eggs and vegetable oil. Stir until just combined.

Bake for 25 minutes at 375°F.
