APPLE, DATE MUFFINS 
2 c. diced apples
3/4 c. chopped dates
1/2 c. sugar
2 c. all-purpose flour
2 tsp. baking powder
1 1/2 tsp. baking soda
1/2 tsp. salt
3/4 tsp. cinnamon
1 tsp. vanilla
1 egg
2/3 c. milk
1/4 c. vegetable oil

TOPPING:

Blend:

1/3 c. all-purpose flour
1/2 tsp. cinnamon
1/4 c. (1/2 stick) butter

Heat oven to 400°F. Grease 12 muffin cups.

Peel and dice apples (not too small). Put in medium size bowl and add chopped dates and sugar; mix. Let stand while getting other ingredients together.

Beat egg and stir in milk, oil and vanilla. Add to apple mixture. Measure flour, baking powder, baking soda, salt and cinnamon. Blend.

Add to apple mixture and mix just until flour is moistened. Fill 12 muffin cups. Top with topping.

Bake 20 to 25 minutes.

Whole wheat flour can be substituted for part of flour.

Great taste and texture. These are a good way to use up aging apples. I didn't peel them and I skipped the topping and dates. My sole adjustment next time will be to sprinkle the muffin tops either before or after baking with cinnamon and sugar.
