BREADED CHICKEN | |
This breading is great with boneless pork chops too! 4 chicken breasts (skinless & boneless) BREADING: 1 cup all-purpose flour 2 eggs + 2 tbsp. water, beaten 1/2 cup freshly grated Parmesan cheese 3/4 cup bread crumbs 1/4 tsp. oregano 1/4 tsp. garlic powder salt and pepper, to taste Flatten chicken between two layers of plastic wrap. Prepare 3 plates for breading. 1st plate, season flour with salt and pepper. 2nd plate, season egg mixture with salt and pepper. 3rd plate, combine, fresh Parmesan, bread crumbs, oregano, garlic powder, salt and pepper. First dip chicken in flour, then in egg mixture letting excess drip back into plate and then coat with bread crumb and Parmesan mixture. Place on platter and refrigerate for at least 1 hour. Preheat electric skillet to 325°F. In about 3 tablespoons olive oil and 1 tablespoon butter, fry chicken on both sides until golden. Serve with your favorite side of pasta. Submitted by: Cipper |
