CARROT CAKE | |
3 c. sifted flour 2 tsp. baking powder 2 tsp. baking soda 2 tsp. cinnamon 1/2 tsp. salt 4 eggs 1 c. raisins 1/2 c. chopped walnuts 2 c. sugar 1 1/4 c. oil 1 tsp. vanilla 2 c. grated carrots Sift together flour, baking powder, soda, cinnamon and salt. Mix together raisins and nuts with 2 tablespoons flour. Beat together sugar, oil and vanilla. Beat in eggs. Stir in dry ingredients alternately with carrots. Blend until smooth. Stir in raisin-nut mixture. Bake in angel cake pan at 350 degrees for 1 1/4 hours. Spread with Cream Cheese Frosting. CREAM CHEESE FROSTING: 1 (4 oz.) pkg. Philadelphia cream cheese 1 cube butter 2 c. powdered sugar |
