DIET PINEAPPLE BREAD 
2 c. sifted flour
1 tsp. baking soda
1/2 tsp. salt
1/2 c. (12 pkgs.) sugar substitute
1 egg, beaten
1 tsp. vanilla
2 tbsp. vegetable oil
1 c. crushed pineapple, packed in unsweetened juice (do not drain)
1 c. raisins
1/2 c. nuts

Preheat oven to 350 degrees; grease 8 1/2 x 4 1/2 inch loaf pan. Sift flour with soda and salt into mixing bowl. Stir in sugar substitute. Combine egg, oil and vanilla. Add to dry ingredients along with pineapple. Stir. Fold in raisins and nuts. Spread evenly in pan and bake 45 minutes. Store in refrigerator overnight for easier slicing.

Makes 34 quarter-inch slices, 53 calories per slice.
