HEAVENLY PINEAPPLE MOLD 
3 oz. pkg. lemon Jello
1 c. boiling water
1 1/4 c. drained crushed pineapple
1 c. shredded sharp Cheddar cheese
3/4 c. pineapple juice
1 tbsp. lemon juice
1 c. heavy cream, whipped or substitute Cool Whip

Dissolve Jello in boiling water, add pineapple juice and 1 tablespoon lemon juice. Chill until slightly thick. Fold in crushed pineapple, Cheddar cheese and whipped cream. Pour into 1 1/2 quart mold. Chill until firm. Unmold.
