PINEAPPLE CAKE 
1 c. crushed pineapple, drained, reserve juice
2 eggs, separated
1/2 tsp. cream of tartar
2/3 c. dry powdered milk
1 tsp. sugar substitute, suitable for baking
1 tsp. vanilla extract
1/2 tsp. baking soda
1/2 tsp. butter
4 tbsp. pineapple juice
1 tsp. vanilla extract
1 tsp. cinnamon
2 slices bread, broken into sm. pieces

Place the drained pineapple in an 8 inch square pan. In a bowl combine the egg whites, cream of tartar; beat until stiff. Set aside. In another bowl combine the egg yolks, milk, sugar substitute, vanilla, soda, butter, pineapple juice and cinnamon; beat 5 minutes or until light and fluffy. Add the broken bread and beat again. Carefully fold the egg mixture into the egg whites; pour over pineapple and bake at 350 degrees for 35 minutes.
