MASSACHUSETTS CORN MUFFINS | |
1/2 c. honey 2 whole eggs 3 egg whites 1 3/4 c. skim milk 1/4 c. vegetable oil 1/3 c. sugar 2 tbsp. baking powder 3 1/2 c. all-purpose flour 1 c. yellow cornmeal 1/4 tsp. salt Nonstick vegetable cooking spray (optional) 1. In a large bowl, whisk together the honey, eggs, egg whites, milk and oil. 2. Add the dry ingredients and mix with an electric mixer at medium high speed for 2 minutes. 3. Spray two muffin tins with cooking spray or line with baking cups. Fill each cup 3/4 full. Bake at 400 degrees for about 15 minutes, or until tops are golden brown. Makes 24 muffins. Per muffin: 155 calories, 23 mg. cholesterol, 1 g. dietary fiber, 3 g. fat, 104 mg. sodium. |
