CORN BREAD MUFFINS 
1 c. unsifted flour
2 eggs, beaten
1/4 c. honey
2/3 c. yellow cornmeal
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 c. plain yogurt
1/4 c. butter, melted

In a large bowl, combine eggs and honey and beat until well blended. In smaller bowl, stir together dry ingredients. Add flour mixture, yogurt and melted butter to egg and honey mixture, stir until batter is evenly moistened. Do not over mix. Spoon batter into greased muffin pans. Bake at 400 degrees 18 to 20 minutes. Makes 12 muffins.
