FAKE PINEAPPLE | |
1 gal. plus one c. tidbit sized cubes OR finely chopped zucchini squash 1 (46 oz.) can unsweetened pineapple juice 1/2 c. Realemon lemon juice 1 tsp. of oil of pineapple or 2 tsp. pineapple extract 3 c. white sugar Peel squash first. Then chop or cut into small cubes, depending on preference. Mix all ingredients together. Boil 3 minutes. Pack into pints and process for time required for zucchini. Or can be frozen. If cubes, it makes 8 pints of "pineapple tidbits". If chopped, it makes 10 to 11 pints of "crushed pineapple". It really does look and taste like crushed pineapple, the tidbits are a little less realistic. |
