FAVORITE RICE PUDDING 
1 qt. milk
1 can evaporated milk
1/2 c. rice (generous)
Pinch salt
1/2 c. sugar
2 eggs, well beaten
1 tsp. vanilla

Cook rice, salt, milk, and evaporated milk for 1 hour or until rice is soft in top of double boiler. (I cook this in the microwave oven on medium power for approximately 40 minutes.) Stir occasionally. Add sugar to eggs; beat until thick.

Slowly add egg mixture to rice, stirring constantly. Cook until thickened. (Again, I do this in the microwave, stirring occasionally.) Add vanilla. Cool. Sprinkle with cinnamon. Serves 6-8.

Since microwave ovens vary in power, you may need to adjust your cooking time.
