CHUNK O'CHEESE MEATLOAF 
1 1/2 lbs. ground beef
1/4 lb. chopped mushrooms
1 chopped onion
1/4 c. minced parsley
3/4 c. bread crumbs
1 egg
1 1/2 tsp. salt
1/4 tsp. pepper
3/4 c. milk
1/2 lb. (8 oz.) extra sharp Cheddar cheese

Blend meat with chopped mushrooms, onion, parsley, bread crumbs, egg, salt, pepper and milk until well blended. Dice cheese into 1/2 inch cubes - blend with meat mixture (by hand) making sure cheese is evenly distributed.

Pack into a 9x5x3 loaf pan. Bake 350 degree oven for 1 to 1 1/2 hours. Pour off liquid. Cool slightly before slicing.

Good served with scalloped potatoes, a green vegetable and a fruit dessert.
