CHUNK O' CHEESE MEATLOAF 
1 1/2 lbs. ground beef
1/4 lb. (4 oz.) fresh mushrooms, chopped
1 med. onion, chopped
1/4 c. minced parsley
3/4 c. dry bread crumbs
1 egg
1 1/4 tsp. salt
1/4 tsp. pepper
3/4 c. milk
1/2 lb. (8 oz.) extra sharp cheddar

Blend meat with chopped mushrooms, onion, parsley, bread crumbs, egg, salt, pepper and milk until well blended. Dice cheese into 1/2-inch cubes. blend into meat mixture by hand, making sure to distribute the cheese chunks evenly. Pack into a 9x5x3-inch loaf pan. Bake at 350°F for 1 to 1 1/4 hours. Pour off liquid. Cool slightly before cutting.
