BUTTERMILK POUND CAKE 
3 c. sugar
1 c. shortening
6 eggs, separated
1 c. buttermilk
3 c. all-purpose flour
1/2 tsp. salt
1/4 tsp. baking soda
1 tsp. vanilla
2 tsp. pure lemon extract

Preheat oven to 350 degrees. Prepare bundt pan, grease and flour or 2 loaf pans, greased and floured.

Cream sugar and shortening, add egg yolks, 1 at a time, beat. Add buttermilk, all dry ingredients and mix. Add vanilla and lemon extract. Mix. Gently fold in stiffly beaten egg whites. Pour into bundt pan, bake 1 hour and 10 minutes. Cool on wood board before removing.
