OLD-FASHIONED BUTTERMILK POUND
CAKE
 
1 c. butter
4 eggs, unbeaten
1 tsp. lemon extract
1/2 tsp. baking powder
1 c. buttermilk
2 c. sugar
1 tsp. vanilla
3 c. sifted flour
3/4 tsp. salt

Cream butter and sugar thoroughly. Add eggs, one at a time. Beat at medium speed with electric mixer for 2 1/2 minutes. Add flavorings. Sift dry ingredients together and add to creamed mixture alternately with buttermilk. Beat 3 1/2 minutes at medium speed.

DO NOT OVER BEAT OR CAKE WILL FALL.

Place in large greased loaf pan (10 x 5 x 3 inches) - may over flow if smaller pan is used. Bake in slow 325 degree oven for 1 hour and 10 minutes or until done. Use toothpick test.
