BILL'S CON CARNE (WITHOUT CHILI PEPPER) | |
1 lb. hamb. 2 green bell peppers 1 lg. onion 2 cans of kidney beans or butter beans, for a change 1 lg. can of crushed tomatoes 1/2 c. of ketchup 1/2 c. water Salt and pepper to taste 1 pkg. of Sweet and Low Wash peppers, core and seed then split peppers and mayonnaise them. Peel onion and slice thin. Place hamburger in a little oil in skillet with a lid. Break meat into small chunks and brown to your liking, add 1/2 cup water, peppers and onions, place lid on top and simmer 15 minutes. Meanwhile in a large kettle put in beans, crushed tomatoes, and catsup which has all the herbs in it. Then add Sweet and Low. Bring to a boil (be sure it is boiling in center and not just around edges.) Drain all fat off your meat, onions and peppers. Pour or spoon this into the tomato mixture. Turn off heat, place lid on pot. Stir frequently so nothing burns on bottom. Serve at once, either in a bowl with crushed saltines or serve over mashed potatoes, rice or cooked noodles. Kids love this especially over mashed potatoes. It will serve 6 to 8. Remainder can be frozen. Put a container of chili powder on table for those who like the hot chili taste. Takes about 30 minutes to prepare. (Do not cook any tomatoes without using some sugar which cuts down on the acidity, this is contrary to Italian cooking which uses no sugar.) |
