CHILI PEPPER PIE 
4 (4 oz.) cans chopped green chiles
2 c. cheese, grated (Cheddar, Colby, or Monterey Jack)
2 eggs, beaten

Spread chiles into 1-inch pie plate. Cover peppers with cheese. Should be at least 1/2 inch thick. Pour eggs over all. Bake at 350 degrees for 20-25 minutes until melted and slightly brown on top. Terrific with Mexican dinner and Cerveza.
