PICK OF THE CHICK 
2 tsp. butter
1/4 c. diced onion
1 tbsp. plus 1 1/2 tsp. all purpose flour
1 c. skim milk
2 oz. cheddar cheese, shredded
Dash each of salt and pepper
6 oz. skinned and boned cooked chicken
1 c. cooked chopped broccoli
3/4 c. cooked macaroni
1/4 c. chopped drained canned pimentos

Preheat oven to 375 degrees. In small saucepan, heat butter until bubbly and hot. Add onion and saute briefly. Add flour and combine thoroughly. Remove form heat and gradually add milk, stirring until thoroughly blended. Return to heat and cook, stirring until slightly thickened, stirring constantly. Add cheese and cook over low heat until sauce is thick and creamy, about 2 minutes. Remove from heat; add salt and pepper. In 2 quart casserole dish combine remaining ingredients; pour cheese mixture over chicken mixture and stir to combine. Bake for 30 minutes. Makes 2 servings.
