CHICK PEA SALAD 
1 can chick peas, drained
1 tbsp. olive oil
1 med. onion, finely chopped
1 green pepper, finely chopped
1/4 c. yogurt
2 tbsp. lemon juice
1/2 tsp. black pepper
1/2 tsp. red pepper flakes
1/2 tsp. cumin seeds
1/2 tsp. ginger
1/2 tsp. coriander
1/2 tsp. turmeric
1/2 tsp. allspice
Salt to taste
1 med. onion, sliced for garnish
1 lg. tomato, sliced for garnish
1/4 bunch fresh parsley, for garnish or substitute 1 tbsp. dried flakes

Heat oil and saute chopped onion and cumin seeds for 3 minutes. Add spices and cook for 2 minutes. Add yogurt and mix well. Add peas, cook 5 minutes on low heat, stirring a few times. Remove and cool for 5 minutes and then add lemon juice.

Cut onion for garnish. Sprinkle with salt and set aside for a few minutes. Wash onions well, then place on salad with sliced tomatoes. Sprinkle with cut parsley and serve warm or cold.
