APPLE CHEESE MUFFINS 
1/2 c. butter, room temperature
2/3 c. sugar
2 eggs
1/4 c. apple juice
1/4 tsp. almond extract
1 3/4 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1 lg. green apple, peeled, cored and chopped (about 1 1/2 c.)
3/4 c. golden raisins
1 c. shredded sharp cheddar cheese

Cream butter and sugar. Add eggs, one at a time, beating after each addition. Mix with apple juice and almond. Add next 5 ingredients. Mix until moist. Stir in apple, raisins and 1/2 cup of the cheese. Spoon into muffin pans until 2/3 full. Sprinkle top of each muffin with remaining cheese. Bake at 375 degrees for 20 to 25 minutes.
