APPLE - CHEESE LATKES 
1 1/2 packed c. finely chopped apple (Granny Smith or Northern Spy)
1 c. sm. curd cottage cheese
1/3-1/2 c. all-purpose flour
1 tbsp. brown sugar
1 tsp. fresh lemon juice
1/2 tsp. ground cinnamon
2 tbsp. almonds (ground fine)
1/2 tsp. salt
3 eggs

In the bowl of an electric mixer beat eggs. Add cheese, sugar, lemon juice, cinnamon and salt. Beat again. Add apples, flour and almonds; mix until just combined. (Use 1/3 cup flour until you see the consistency, if batter is too loose add a little more flour.) Fry pancakes on both sides in enough oil to prevent sticking. Serve with sour cream or yogurt.
