PARSLEY RICE RING 
2 c. rice (not minute)
5 c. water
1 tsp. salt
1/2 c. butter
1 onion, chopped
1 c. chopped parsley

Prepare rice as per instructions. Do not rise. Stir in butter, onion and parsley.

Grease ring mold generously with butter. Pack in rice mixture. Let set about 15 minutes. Unmold on serving plate. Fill with Beef Carbonaire.
