ALOHA LOAF | |
1 c. butter 2 c. sugar 4 eggs 1 c. mashed ripe bananas 4 c. sifted flour 2 tsp. baking powder 1 tsp. baking soda 3/4 tsp. salt 1 can (15 1/4 oz.) crushed pineapple 1 c. shredded coconut Cream butter and sugar until light and fluffy. Add eggs and mix well. Stir in bananas. Sift together flour, baking powder, soda and salt. Add to creamed mixture and mix well. Fold in undrained pineapple and coconut. Pour into greased and floured 9x5 inch loaf pans. Bake at 350 degrees for 1 hour and 10 minutes, or until done. Remove from pans to cool. This makes two loaves and may be frozen. |
