ASPARAGUS ON TOAST 
Cook asparagus spears as desired. Place one serving of asparagus on a slice of toast and top with the following sauce:

2 tbsp. butter
2 tbsp. flour
1/4 tsp. salt
1/8 tsp. pepper
1 c. milk

Melt butter over low heat in a heavy saucepan. Blend in flour, seasonings. Cook over low heat until mixture is smooth, bubbly.

Remove from heat. Stir in milk, bring to boil, stirring constantly, for one minute.

Make one cup - enough for 2 to 3 servings.
