ASPARAGUS WITH MANDARIN-PEPPER
SAUCE
 
Spring is in the air. Young, tender asparagus topped with easy-to-prepare Mandarin-pepper sauce makes the perfect side dish for Easter ham or lamb. Colorful and flavorful, this nutrient-rich, low-fat sauce makes a great topping for grilled fish or poultry.

1 can (11 ounces) Mandarin oranges in juice, drained and chopped
1/2 cup chopped, canned roasted red bell pepper
2 tablespoons chopped green onion
1 tablespoon lite soy sauce
1 tablespoon sesame oil
1 teaspoon freshly grated ginger or 1/4 teaspoon dry ginger
1 1/2 pounds fresh asparagus, trimmed
1/4 cup toasted, slivered almonds*

Preparation Time: Approximately 10 minutes

Cook Time: Approximately 5 minutes

Gently combine Mandarin oranges, bell pepper, green onion, soy sauce, sesame oil and ginger in a small bowl. Set aside. Sauce may be prepared ahead. Cook asparagus in a covered skillet, in a small amount of water, just until tender crisp, about 4 to 5 minutes. Drain. Arrange asparagus on a serving platter. Spoon Mandarin-pepper sauce over the asparagus; top with almonds. *To intensify flavor, toast almonds in a dry skillet over medium heat for 2 to 5 minutes, shaking often.
