MICKI'S BROCCOLI SOUP 
1 lg. head broccoli
1 lg. apple, peeled & sliced thin
1 lg. onion, sliced thin
1 can chicken broth or more to cover
2 tbsp. butter
1 tbsp. fresh or dried chives
Salt & pepper to taste

Saute apple and onions in butter until soft. Cut flowerettes from broccoli, set aside. Thinly slice stems and cook with broth, apples and onions until tender. Add some flowerettes and cook another 5 minutes. Cool.

Put into blender. Blend until smooth. Add salt and pepper to taste. Add uncooked broccoli and chives before serving. Heat to serve. Croutons can be added before serving.
