MOCKING BIRD CAKE | |
3 c. plain flour 1 tsp. salt 1 tsp. cinnamon 3 eggs, beaten 1 1/2 tsp. vanilla 1 (8 oz.) can crushed pineapple, juice and all 2 c. sugar 1 tsp. baking soda 2 c. nuts, chopped 1 1/2 c. Crisco oil 2 c. bananas, chopped Combine all dry ingredients in large bowl. Add eggs, oil, stir until dry ingredients are moist (do not beat), stir in vanilla and pineapple. Add nuts and bananas. Spoon into 3 greased and floured pans. Bake at 350 degrees for 25 minutes or may be a little longer or in oblong pan 9 1/2 x 13 inches. Cook on 350 degrees for 60 minutes. Let cool in pan 5 minutes. Icing can be used. CREAM CHEESE ICING: 1 (8 oz.) cream cheese 1 c. butter 1 box powdered sugar 1 tsp. vanilla 1 c. nuts Mix and use on cool cake. |
