BRAISED RED CABBAGE WITH VINEGAR
AND BACON
 
1 lb. bacon, cut in 1 inch pieces
2 c. chopped onion
1 head red cabbage, cored and finely slivered
3 tart apples, cored and cut into 1 inch cubes
1 c. golden raisins (optional)
3/4 c. dry red wine
3/4 c. herbal or fruit vinegar
3 tbsp. packed dark brown sugar
2 tsp. caraway seeds
1 tsp. dried thyme leaves
1/2 tsp. ground pepper
1/2 tsp. salt

Cook bacon in deep skillet over low heat for 15 minutes. Add onions and cook until wilted. Add remaining ingredients, and toss. Cover, and cook over medium heat for 1-1/4 hours, stirring from time to time. If necessary, add liquid. Serve hot.
